STIR FRIED FIVE SPICE SHRIMP AND SNOW PEAS
"To turn your house into a Chinese restaurant, start the meal with some purchased egg rolls, then accompany the stir-fry with steamed rice. For dessert, buy some fortune cookies and serve with pineapple chunks - it will be like homemade take-out."
1 1/4 pounds large shrimp, peeled and deveined
2 teaspoons Chinese five-spice powder*
3 tablespoons peanut oil or vegetable oil
1/2 pound snow peas, halved if large
1 tablespoon rice wine vinegar
1 tablespoon soy sauce
1/4 cup thinly sliced green onions
Sprinkle the shrimp with the five-spice powder. In a large skillet, heat the oil. Stir-fry the shrimp over medium-high heat just until they turn pink, 2 to 3 minutes.
Add the snow peas and stir-fry until crisp tender, about 1 minute.
Add the vinegar, soy sauce, and green onions. Simmer for 30 seconds, and serve.
*Chinese five-spice powder is a great ingredient to have on hand. It's a mixture of anise, ginger, licorice root, cinnamon, and cloves, and gives a wonderfully complex flavor to the simplest of stir-fries, such as this one, which uses only seven ingredients and takes about five minutes to prepare.
Makes 4 servings
