CALICO SKILLET SALAD
2 tbsp butter
1 cup coarsely chopped cabbage
1/3 cup bias-cut celery slices
1/3 cup thinly sliced carrot
2 tbsp slivered green pepper
2 tbsp chopped onion
1/2 tsp salt
dash pepper
3 tbsp light cream
chopped fresh parsley (for garnish)
Melt butter in a skillet; add veggies, salt and pepper. Cover and cook over medium heat just until the veggies are slightly tender, about 3 minutes.
Add the cream; heat thoroughly, stirringly gently once or twice.
Garnish with parsley. Serve immediately.
