Recipe(tried): Camp Food

I take along stuff to make quesadillas(?).
I use a light weight steel fry pan, some bacon grease left over from breakfast, 12" flour tortillas, chopped up scallions-I do these at home and store in a ziplock bag, preshredded cheese. This is the basic recipe. If there is left over chicken or other meat it can be added into the tortilla. This is great for using up left overs. I also find it easy 'cuz most of the prep work is done at home.
Heat up the pan over a med. to low fire. Use the back of a spoon to put a little bacon grease in the pan. Swirl to melt. Immeditately add the tortilla and spin it around to evenly coat. On one half of tortilla add some cheese, not too much, then scallions, and meat. Top off with some more cheese. Now fold over the tortilla and press down with a spatula. By now if the fire is hot you will need to flip over the tortilla. Keep flipping and moving it around until its all good and melted inside and crispy outside. Serve with salsa. For a large crowd I cut the quesadilla in fourths and then pass the salsa.
Try adding scrambled eggs, sausage,avocado or tomatoe wedges.
