Recipe(tried): Caramel-Pecan Oatmeal Cake

Here's an easy good cake;

CARAMEL PECAN OATMEAL CAKE

3 cups water
2 cups oats (oatmeal)
1 cup butter
2 cups sugar
2 cups brown sugar
4 tablespoons molasses
4 eggs
3 cups flour
2 teaspoons soda
2 teaspoons cinnamon
1 teaspoon salt
1/2 teaspoon nutmeg

Bring water to a boil. Place oats in a bowl and pour water over, let cool to lukewarm. In another bowl beat butter until creamy and gradually add the sugars beating well. Mix in molasses, eggs and oat mixture. Stir together the flour, soda, cinnamon, salt and nutmeg. Add to creamed mixture and beat until smooth. turn into greased and floured 9 x 12 pan. Bake in 350 oven for 50 minutes or until top springs back.
Remove from oven and spread caramel topping (recipe below) Place about 4 inches under a broiler and broil until topping browns (about 5 minutes) Cool. Makes about 12 servings.

CARAMEL TOPPING

Place in sauce pan:
12 Tablespoons butter or margarine
1 1/2 cups brown sugar
6 tablespoons cream or milk
Heat until butter melts
Add 1 cup coconut(flaked)
1 cup chopped pecans
Boil 1 minute, stirring. Spread over top of cake and follow directions above.

If you want you can make half the recipe and bake in a 9 in square pan.
