Recipe: Caribbean Dressing

CARIBBEAN Dressing

1/4 cup KEY LIME JUICE
1/4 cup chopped fresh coriander (cilantro)
1/2 tsp. ground cumin seed
2/3 cup olive oil
1/4 to 1/2 tsp. red pepper flakes
1/2 tsp. salt
1/8 tsp. ground black pepper

Whisk together lime juice and olive oil. Blend in remaining ingredients and mix well. Makes about 1 cup of dressing. Use this pungent dressing on salads such as shrimp or chicken.
