CARROT COTTAGE CHEESE SALAD
4 medium carrots (2 cups grated)
1 cup cottage cheese
1 tablespoon finely chopped onion
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1 tablespoon lemon juice
Crisp Lettuce Leaves (for serving)
In a bowl combine all ingredients except lettuce leaves; mix well. Cover and chill thoroughly.
Spoon onto lettuce leaves to serve.
Makes 4 servings
