Recipe: Charcoal Grilled Spanish Mackerel, Broiled Spanish Mackerel for Annie

Hi Annie :-) Here are two recipes that I found for you on the internet. I have not tried either recipe.

Charcoal Grilled Spanish Mackerel

3 lbs. dressed mackerel
1/2 cup lemon juice
1/4 cup olive oil
1 tsp. salt
1 tsp. dried oregano leaves, crushed
3/4 tsp. garlic salt
1/2 tsp. pepper

Combine lemon juice, olive oil, salt, oregano, garlic salt and pepper for sauce. Make 4-5 shallow slits on both sides of each fish; brush inside and out with sauce. Place fish on well-greased hinged wire grills, cook about 4 inches from moderately hot coals for 5 to 8 minutes. Baste with sauce, turn and cook 5 to 8 minutes longer or until fish flakes easily when tested with a fork.

Broiled Spanish Mackerel

1 Spanish mackerel, 3 lb
1 Lemon, sliced
1 tbsp Salad oil
Parsley garnish
1 tbsp Butter
1 Sauce a la Maitre D'Hotel
1 Lemon, juice of

Before broiling rub thoroughly with salt, brush with pepper and work in a little olive oil. Lay on broiler and brown well on both sides, being careful not to break it. Apply sauce and serve. If fish is large, split down middle of back before broiling.
