Recipe: Cheese and Potato Meatloaf (using canned potatoes, topped with ketchup)

1 lb. ground beef
2 eggs
1/2 cup milk
3 slices dry bread, crumbled
1 small onion, chopped
Ketchup
1 tsp. salt
1/8 tsp. pepper
1 (16 oz.) can sliced potatoes, drained
4 slices any kind of cheese (optional)
In medium bowl combine beef, eggs, milk, bread, onion, salt and pepper; mix well. Spread half of mixture in greased 9 x 5 inch loaf pan. A thin coating of ketchup on the bottom is helpful. Layer with the potatoes and cheese slices and then the remaining meat mixture. Top with ketchup.
Bake at 350 degrees F for 1 hour.
Makes 4 servings

I hope this is the recipe you're looking for. If you try it please let us know how it turns out. If you'd rather not use canned potatoes, I'm sure potatoes boiled and sliced (not too soft because they'll cook 1 hour in the meatloaf) will work in it too.
