Recipe: Cheesy Onion-Rice Bake

I just received this recipe from Dierbergs School of Cooking.

Cheesy Onion-Rice Bake

1/4 C. butter
2 Large Vidalia or sweet onions, chopped
1 tsp. dried dill weed
1/2 tsp. salt
1/4 tsp. pepper
1 can (10.5 oz.) cream of celery soup
1 container (8 oz) sour cream
3 cups cooked rice
8 oz. (2 cups) finely shredded colby jack cheese (divided)

In large skillet over medium-high heat, melt butter. Add onions, dill, salt and pepper; cook until soft and translucent, about 6 minutes. Cool slightly. Stir in sour, sour cream, rice and half of the cheese; mix well. Place in lightly greased 9 x 13 inch baking dish. Bake 350 F oven for 25 minutes. Top with remaining cheese, bake for 5 to 7 minutes longer or until cheese melts.
Makes 10-12 servings.
