Recipe: Cherries Jubilee
Misc. CHERRIES JUBILEE
1 can(16oz.)dark sweet cherries, drained, reserving juice
1 tbsp. cornstarch
1 tbsp. lemon juice
1 cinnamon stick or 1/4 tsp. ground cinnamon
1/4-1/2 cup brandy
Sliced pound cake or vanilla ice cream
combine reserved syrup, cornstarch, cinnamon and lemon juice. In a small
saucepan cook over medium heat, stirring constantly until thickened. Remove
cinnamon stick and add cherries. Serve warm over pound cake or ice cream.
Garnish with whipped topping. Makes 4-6 servings. To flame at tableside,
prepare cherries as above and place in heated serving dish. Heat brandy,
pour over warm cherries and ignite. Ladle flaming cherries over pound cake
or ice cream.
