Recipe: Peanut Butter Bread with Buttermilk

PEANUT BUTTER BREAD WITH BUTTERMILK

1 3/4 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 cup brown sugar, packed
1/3 cup peanut butter
1 egg, well beaten
1 cup thick buttermilk

Grease an 8 x 4 x 2 1/2-inch loaf pan well.

Sift flour; measure and resift with baking soda and salt. Set aside.

Blend sugar and peanut butter well; add egg and beat until smooth. Add flour mixture and buttermilk alternately in 3 portions, beating until smooth after each. Turn into prepared pan.

Bake in moderate oven (350 degrees F.) 45 minutes or until browned and bread tests done with a cake tester. Remove from pan to cake rack to cool.

Makes 1 loaf
