Recipe: Chewy Oatmeal Cookies (using egg whites, oil, nuts and dates or raisins)

CHEWY OATMEAL COOKIES
2 egg whites
2/3 cup oil
1 cup sugar
1 cup brown sugar
1 tsp. vanilla
1 tsp. baking soda in 3 tbsp. boiling water
1/2 tsp. salt (or less)
2 cups flour
1 cup old fashioned oatmeal, uncooked
1 cup quick oatmeal, uncooked
1 cup chopped dates or raisins
1 cup chopped nuts (optional)
Beat eggs until fluffy. Add oil and sugars and vanilla. Add boiling water and baking soda.
Add dry ingredients in order given and drop by teaspoonful on cookie sheets.
Bake at 350 degrees F for 10 to 12 minutes.
