CHICKEN A LA KING OF BLING
4 tablespoons (1/2 stick) butter, divided use
3 tablespoons chopped pimiento
3 tablespoons chopped green pepper
1/4 pound mushrooms, sliced
3 tablespoons flour
1 cup chicken broth
1 cup heavy (whipping) cream
1 teaspoon salt
3 cups cut-up cooked chicken
3 egg yolks
3 tablespoons sherry
pastry shells, toast, rolls or rice (for serving)
In large saucepan, heat 3 tablespoons butter and saute the pimiento and green pepper 4 minutes.
Add mushrooms and cook 3 minutes.
Push vegetables aside and stir flour into butter. Add broth, while stirring, and cream and salt. Simmer until thickened, stirring occasionally.
Add chicken to heat through.
In small bowl, beat egg yolks with a little cream or broth and stir into chicken mixture. Cook gently, stirring constantly, 2 to 3 minutes.
Melt remaining 1 tablespoon butter. Add sherry and drizzle melted butter over chicken mixture just prior to serving.
Serve in pastry shells or on toast, rolls or rice.
Makes 6 servings
