STEAMED FISH IN CHILE-CILANTRO SAUCE
1 green jalapeno (seeded for less heat, if you wish), coarsely chopped
1/2 packed cup chopped fresh cilantro
1/2 teaspoon salt
Freshly ground pepper to taste
3 tablespoons extra-virgin olive oil
1 1/2 pounds fish fillets (salmon, black cod or tuna), cut into 1 1/2 x 4-inch pieces
Place the jalapeno and cilantro in a mini food processor and process into a fairly smooth paste. Scrape out into a large mixing bowl and add the salt, pepper and oil. Add the fish, tossing gently with a rubber spatula to coat each piece.
Place the fish and marinade in a large skillet over low heat. Cook, covered, until the fish is done, 8 to 10 minutes (depending on the thickness), turning once.
Serve immediately. If allowed to stand, the sauce darkens, losing the lovely green color (although the flavor is fine).
Makes 6 servings
