Recipe: Chicken and Pasta Fruit Salad with Cashews

Chicken Pasta Fruit Salad

1 small (1 pound or less) box small type pasta such as rings or small bow tie
2 cups cooked, diced chicken or turkey breast
2 cups halved red seedless grapes
2 oranges, peeled, seeds removed and diced
1/2 cup sweet red bell pepper
1/4 cup thinly sliced green onions
11/2 cups coarsely chopped cashews
1/2 cup mayonnaise
1/4 cup sour cream
3 tablespoons orange juice
3-4 tablespoons sugar
1 teaspoon curry powder

Cook pasta according to package directions, drain well and chill until cold. Toss together pasta, chicken, grapes, orange pieces, pepper, onion and cashews. In a bowl combine mayonnaise, sour cream, orange juice, sugar and curry powder; stir until well blended and creamy. Drizzle over salad, toss lightly until all is well-coated. Cover and chill until ready to serve. Serves 6-8.
