Recipe: Chicken Breasts with Cumin, Coriander...

Just recently found this in my collection and hope to prepare it soon. Perhaps it is similar to what you are looking for. Think it would work on a regular grill.

CHICKEN BREASTS WITH CUMIN, CORIANDER AND LIME

3 tablspoons fresh lime juice
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon salt
1 teaspoon sugar
1/8 teaspoon cayenne pepper
4 medium boneless, skinless chicken breasts
nonstick cooking spray
1 tablespoon chopped fresh cilantro

In a large bowl, mix lime juice, cumin, coriander, salt, sugar and cayenne pepper; add chicken, tossing to coat.

Spray grill pan with nonstick cooking spray; heat over medium-high heat until hot but not smoking. Add chicken and cook 5 to 6 minutes per side or until juices run clear when thickest part of breast is pierced with tip of knife, turning once and brushing with any remaining cumin mixture halfway through cooking. Place chicken breasts on platter; sprinkle with cilantro.
