Hi June,
I found this in a crockpot cookbook.We had it for dinner today and it was delish. I served it over linguine, with a tossed salad and garlic bread, it was very filling.

CHICKEN CACCIATORE

4 boneless, skinless chicken breasts (could also use thighs)
2 medium onions, coarsely chopped
1 large bell pepper, coarsely chopped
1 (4 oz.) jar of mushroom slices, drained (I would have preferred fresh, but didn't have any and didn't want to go out in the snow to get some.)
2 tsp. salt
garlic powder
freshly ground black pepper
1/2 cup white wine
1 (28 oz.) can diced tomatoes

Put the washed chicken in the bottom of the crockpot. Sprinkle with garlic powder and pepper. Add green pepper, onions and mushrooms. Pour the tomatoes over all and add the wine.

Cook on low for 6-8 hours, or until chicken is tender.
Serve over linguine.
