Recipe: Graham Crackers

G'day Thomas, I can provide a recipe for Graham crackers, but alas, not the other request. I have not tried them yet so dont't know how they will turn out.

GRAHAM CRACKERS
Preheat oven to 200C (400F)
Makes about 60
Grease oven trays

2 1/3 cups wholemeal plain flour
1/2 cup cornflour
1/2 teaspoon salt
1/4 cup caster sugar
150 g (5 ozs) butter
3/4 cup cream

Sift flour, cornflour, salt and caster sugar into a bowl

Rub in the butter with the fingertips until it resembles fine breadcrumbs. Stir in the cream to make a pliable dough.

Shape the dough into a ball, wrap in plastic cling-film, and chill for 30 minutes. Roll out thinly,

With a pastry wheel or sharp knife, cut dough into squares or oblongs. Place on prepared oven tray, allowing room for spreading.

Bake at 200C (400F) for 6 to 7 minutes, or unril firm and golden brown. Cool for 2 to 3 minutes on trays. Transfer to wire rack to cool completely. Store in an airtight container.
