Chicken Catalu a Style
2 lbs chicken pieces
olive oil
1 cup sweet sherry
1 (1 lb) can whole tomatoes in juice
1 onion, thinly sliced
1 red pepper, sliced
2 garlic cloves, crushed
1 tbsp all-purpose flour
salt to taste
1/2 tsp brown sugar
Saute the chicken in the olive oil until lightly browned.
Add the sherry and cook 5 minutes. Remove the chicken.
Add the tomatoes, onion, red pepper, garlic, and the flour. Move while cooking, add salt and sugar.
Add the chicken again and mix with the sauce for a few minutes. Serve over rice or parsley potatoes.
