KFC CHICKEN
(copycat recipe using corn flakes)
FRIED CHICKEN SPICE MIXTURE:
1/2 cup all purpose flour
1 tsp fresh ground black pepper
1 tsp oregano
1 tsp rounded tsp monosodium glutamate
1/2 tsp cumin
1/2 tsp onion salt
1/2 tsp (slightly less) paprika
1/2 tsp rubbed sage
1/4 tsp salt (more if desired)
1 bay leaf
1/4 tsp Italian seasoning
FOR THE CHICKEN:
chicken pieces
1 cup milk (optional)
1 egg, beaten (optional)
oil for frying
Place all for spice mixture ingredients in plastic coating bag or mix thoroughly in medium bowl (can be multiplied or larger batches).
TO FRY CHICKEN:
In small bowl place 1 cup milk mixed with one egg; set aside.
Wet chicken pieces and pat dry. Dip each piece of chicken in milk mixture and then in coating mix*.
Place chicken in deep fry basket or if using deep skillet in sufficient oil to cover chicken pieces.
Fry at 400 plus degrees until cooked thru. Remove and drain on paper towels.
*If using shaker bag omit the milk mixture and shake two pieces at a time to coat well.
FOR EXTRA KRISPY COATING:
Dip in mixture of 1 cup of flour mixed with 1/2 cup of corn meal or 1 cup of crushed corn flakes.
