Recipe(tried): Chicken Chunks, Mac 'n Cheese, and Any Way Snack Mix

CHICKEN CHUNKS
This makes about 72 chunks and is great for something in a hurry!
1 cup bread or cracker crumbs, unseasoned
1/2 cup parmesan cheese, grated
1/3 cup finely chopped walnuts
1 tsp dried thyme
1 to 2 tsp dried tarragon
1/2 tsp salt
1 clove minced garlic
6 boneless skinless chicken breasts
1/2 cup melted butter
Mix all ingredients together except chicken and butter.
Cut chicken into 1 inch chunks, dip in the melted butter and roll in crumb mixture.
Place in a single layer on a baking sheet and freeze.
Bake frozen chunks at 400 degrees for 15-20 minutes or until golden brown.
These can also be baked as soon as you make them at 400 degrees for 12-15 minutes.
MAC 'N CHEESE
I make this in smaller batches and freeze them. It is easy to pop into the oven for a lunch or side dish or great snack!!
2 cups elbow pasta or small shells
1 cup milk
1 small block Velveeta cheese, cubed
1/2 cup grated cheddar cheese
1/2 cup grated Vallegret or sharp white cheese
dash red pepper
salt to taste
1 stick (1/2 cup) butter
2 tbsp flour
salt and pepper
If baking preheat oven to 350 degrees. If freezing prepare pans with saran wrap or foil liners.
Put on a pot of water to boil. Once it is boiling, add pasta and a little salt.
While pasta is cooking, mix milk with the cheeses, red pepper and salt in a saucepan. Melt over low heat stirring constantly to prevent sticking.
Drain pasta and pour into large bowl. Add butter and stir until melted. Add flour and toss to coat. Add cheese and milk mixture and stir well. Add salt and pepper.
Bake at 350 degrees 30-45 minutes or until cheese is bubbly and lightly browned around edges.
From frozen, bake at 325 degrees 45 minutes to 1 hour.
ANY WAY SNACK MIX
1/4 cup raisins
1/4 cup white raisins
1/4 dried cranberries
1 bag goldfish cheese crackers
1 bag mini twist pretzels, or goldfish pretzels
1 bag mini apple cinnamon flavored rice cakes broken into bite sized pieces
Mix all well and store in an airtight container.
This is also great mixed with 1 cup M & M's and/or 1 cup mixed nuts. I also add dried bananas and coconut shavings when I have them.
