Recipe(tried): Freeze Ahead Sandwhiches for Lunches
SandwichesThis is not for dinner but something I have done and my mom always did -- she was a working mom in the 60's for me...
One time a month we would shop together and then have a sandwich making evening...
BASICS:
- Don't freeze any mayonnaise.
- Tuna is good this way too just no mayonnaise.
- Peanut butter and jelly is REALLY good this way.
- Of course any type luncheon meat too.
Thinly butter both sides of bread to keep fresh while thawing in lunch bag.
Make sandwich.
Place each in a baggie and label.
Place in a single layer on a cookie sheet and freeze.
Once frozen put in larger bread bags and keep in freezer.
I'd go to freezer each morning and take what I'd like then to the snack cupboard and grab a Twinkie or whatever and wa-la instant lunch -- by lunch time the sandwiches were nicely thawed.
I loved the time making them with mom, other moms have used this idea and like it too -- I've even done for moms who had surgery and put them in their freezers for convenience.
good luck
