Recipe: Chicken Corn Soup (with hard boiled eggs)
SoupsChicken Corn Soup
1 whole cooked chicken
1 large diced onion
1 stalk diced celery
3 diced hard-cooked eggs
1 large bag frozen whole kernel corn
2 cups flour
1 egg
salt
pepper
Cook chicken in enough water to cover until done. Remove chicken from bones and return meat to broth chicken was cooked in. Add onions, celery, hard-cooked eggs and corn. Cook until veggies are done.
Make small rivvels by mixing flour, egg, salt and pepper until crumbly.
Drop into both and simmer about 15 minutes more.
This soup can be simmered as long as you wish and seems to improve when reheated.
This is from a fire district fund raising cookbook, Burnt Offerings.
