Recipe: Chicken Down-East Style (slow-baked, using sour cream, 1950's)

"Mighty tender chicken is the result of this long slow baking."
1 frying chicken, cut up
Seasoned flour
4 tablespoons butter
1 onion, minced
Freshly ground black pepper
1 cup sour cream
Shake chicken in seasoned flour and delicately brown pieces in butter.
Saute onion lightly. Remove chicken to lightly greased casserole, sprinkle with pepper.
Bake in moderate oven (375 degrees F) for 30 minutes.
Remove chicken from oven and reduce oven to 300 degrees F.
Spoon about 3 tablespoons sour cream on chicken, a little on each piece. Cover dish, and bake 2 hours. Add more sour cream, from time to time, till all is used.
Makes 4 servings
