Recipe: Tomato Salsa Cruda

TOMATO SALSA CRUDA

2 cups assorted color cherry tomatoes, halved
1 large ripe red tomato, chopped
1 large ripe yellow tomato, chopped
2 jalapeno or Serrano peppers, peeled, seeded and minced
1/3 cup chopped fresh cilantro
1/4 cup plus 2 tablespoons fresh lime juice; more if needed
3 green onions, thinly sliced
1 teaspoon coarse salt, plus more to taste

In a large bowl, mix the tomatoes, the peppers, cilantro, lime juice and green onions and add 1 teaspoon salt. Taste and season with additional lime juice and salt as needed.

Makes 3 1/2 cups
