Recipe: Chicken in Apricot & Coke Sauce

Chicken in Apricot & Coke Sauce

8-10 chicken drumsticks
3 large onions, sliced
3 Tbs. oil
1/4 tsp. black pepper
dash of each: mild paprika, cumin, nutmeg, garlic, salt, basil, coriander,
cardamon, marjoram, oregano, thyme, parsley (all ground).

For sauce:

3 Tbs. soy sauce
3 tsp. apricot jam
3/4 cup catsup
1 cup coca cola

6 med. peeled/halved potatoes
100 gr. dried appricots.

Method:

Grease a baking pan, place onion slices
on bottom, place chicken parts over onions,
and sprinkle with seasonings.

In a bowl, mix all ingredients for sauce.
Arrange potatoes and apricots around the
chicken, pour sauce over everything,
cover and bake 3 hours in pre-heated oven
(medium heat).

Check the stew every once in a while and
baste with the sauce.
