Recipe(tried): Chicken Romano
Misc. I am relatively new to the board, but I thought I would post something I served the other night. I served Chicken Romano (although I used Parmesan cheese instead of romano) and with that I served angel hair pasta mixed with butter and herbs. The recipe was very good, and I am sure we will have it again.
Chicken Romano
4 Boneless Breasts
2 TBSP Olive Oil
1 med. onion, chopped
1 Bottle Chili Sauce
2 tsp. oregano
salt and peper to taste
Grated parmensan cheese
In skillet, brown chicken in olive oil. When chicken is brown (it will not be done), sprinkle salt and pepper over it add onions (you can also add garlic, if you wish) and simmer, covered about 30 minutes (be sure to stir occassional to allow the onions to cook and not brown). Remove cover, add chili sauce and organo, and cook about 20 minutes more, being sure to baste frequently with sauce. Serve with parmesan cheese.
* I do not follow the exact recipe, as I do not like having to stand over it once the chili sauce is added. Once I reach the point that the chili sauce is to be added, I transfer the chicken and onions to a baking dish cover with sauce and bake for 20 minutes. It turns out just as good, and I am able to fix noodles and garlic bread to serve, or toss a salad while it is baking. Enjoy!
