Recipe: Chicken Siesta Twist (using rotini/spiral pasta)

CHICKEN SIESTA TWIST

1 pound rotini pasta, uncooked
1 teaspoon garlic powder
1 packet taco seasoning, divided use
2 to 3 boneless skinless chicken breasts, cubed
1/2 green or red bell pepper, sliced
1 (10 ounces) can tomatoes with green chilies
to serve:
sour cream
chopped green onions

Cook pasta according to package directions; drain and keep warm.

Mix garlic powder and all but 1 teaspoon taco seasoning in small bowl; toss garlic-taco mixture with cubed chicken.

Spray medium skillet with cooking spray; cook chicken until browned.

Add bell pepper and tomatoes; cover and simmer 10 to 15 minutes.

TO SERVE:
Toss pasta with remaining taco seasoning. Place on large serving plate. Top with chicken mixture, sour cream and chopped green onions.

Makes 4 to 5 servings
