CHICKENETTI FOR A CROWD
Servings: 100
16 cups vermicelli, uncooked and broken into 2 1/2 in. lengths
20 cups chopped turkey or chicken
92 ounces cream of mushroom soup
10 small cans sliced mushrooms
6 cups chicken broth
5 cups chopped onion
3 cups red bell pepper, chopped
3 cups green bell pepper, chopped
salt and pepper to taste
6 pounds grated sharp cheese, divided use
2 pounds Ritz crackers, crushed into crumbs, divided use
Cook the broken vermicelli, about 8 minutes in boiling water. Drain well.
Preheat oven to 350 degrees F. Coat 2 steam table pans with nonstick cooking spray (Pam).
Mix with the ingredients, using half the cheese and crumbs.
Combine the remaining cheese and crumbs; set aside.
Pour pasta mixture into prepared pans and cover with the cheese and crumbs mixture.
Bake at 350 degrees F for about 45 minutes.
