Recipe: Super Easy Potato Salad (using frozen hash browns)

SUPER EASY POTATO SALAD

FOR THE DRESSING:
1 cup mayonnaise*
2 tablespoons prepared mustard
2 teaspoons sugar
1/2 teaspoon salt -(or more, to taste)
1/8 teaspoon pepper
FOR THE SALAD:
32 ounces frozen southern style hash browns, slightly thawed
1 cup chopped celery
1/3 cup chopped onion
3 hard cooked eggs, chopped

In small bowl, combine all dressing ingredient; blend well.

In large saucepan, cover potatoes with water; bring to a boil. Cover; boil 1 minute. Drain; rinse with cold water.

In large bowl, combine all salad ingredients. Pour dressing over potato mixture; mix well. Refrigerate to blend flavors.

*Use Homemade Mayonnaise, commercial mayonnaise or reduced-calorie mayonnaise.
