Recipe: Chili-Rub Chicken

I've never eatten at El Pollo Loco, but this recipe might be similar

CHILI-RUB CHICKEN

3 tablespoons olive oil
4 cloves garlic, minced
1 jalapeno pepper, seeded and minced
2 tablespoons fresh lime juice
2 teaspoons ground cumin
2 teaspoons ground coriander
2 teaspoons ground sweet paprika
1 teaspoon grated fresh ginger
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cayenne pepper
3 pounds chicken pieces or boneless chicken breasts

Combine all ingredients except chicken; mix well. (The rub can be made in advance, covered and refrigerated up to a week.) Rub chicken pieces well with mixture and place in zip-top bag or in a bowl. Refrigerate several hours or overnight.

WHEN READY TO COOK:

Prepare grill using indirect medium heat. Grill chicken with lid closed, turning after 15 minutes. Cook until juices run clear, about 15 more minutes. Let stand 5 minutes before serving.

Makes 6 servings
