Recipe: Chocolate Chip Cinnamon Waffles (using biscuit mix)
Breakfast and BrunchCHOCOLATE CHIP CINNAMON WAFFLES
1 3/4 cups biscuit mix (such as Bisquick)
2 tablespoons unsweetened cocoa powder
1 1/4 cups milk
1 large egg
2 tablespoons vegetable oil
1 pinch ground cinnamon
1/4 cup miniature semisweet chocolate chips*
Preheat electric waffle iron. Mist top and bottom of interior with vegetable oil cooking spray. Preheat oven to 250 degrees F (you'll use it to keep waffles warm until they are all ready to serve).
Place (dry) biscuit mix, cocoa powder, milk, egg, oil and cinnamon in large mixing bowl and stir to combine well. Fold in chocolate chips and mix until just incorporated.
Ladle about one-third cup of the batter onto hot waffle iron, spreading it out so that it almost but not entirely covers the bottom. Close lid and cook waffle 3 to 4 minutes or until light comes on to indicate that waffle is done. Waffle is fully cooked when it does not stick to top or bottom of iron.
Using a fork, transfer waffle to a heatproof plate and place it in oven to keep warm. Repeat with remaining waffle batter.
*If you don't have miniature chocolate chips, simply place a small chunk of semisweet chocolate in a food processor and pulse a few times to create chocolate shavings.
