Recipe: Spinach Rice Balls (appetizers, baked)

SPINACH RICE BALLS

2 cups cooked rice
1 (10 ounces) package frozen chopped spinach, thawed and squeezed dry*
2/3 cup dry Italian-style bread crumbs, divided use
1/2 cup grated Parmesan cheese
1/3 cup minced onion
3 egg whites, beaten
1/4 cup skim milk
1 tablespoon Dijon mustard
Vegetable cooking spray

Combine rice, spinach, 1/3 cup bread crumbs, cheese, onion, egg whites, milk, and mustard in large bowl.

Shape into 1-inch balls. Roll each ball in remaining 1/3 cup bread crumbs. Place on baking sheet coated with cooking spray.

Bake at 375 degrees F for 10 to IS minutes. Serve warm.

*Substitute (10 ounce) 1 package frozen chopped broccoli, thawed and well drained, for the spinach, if desired.

Makes about 3 dozen rice balls
