Recipe: Chocolate Chip Snack Squares

CHOCOLATE CHIP SNACK SQUARES

1/3 cup margarine, softened
1/3 cup skim milk
1/3 cup unsweetened orange juice concentrate
1 egg
2 tablespoons honey
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup semisweet mini chocolate chips

Preheat oven to 350 degrees F. Oil and flour an 8x8x2-inch baking pan.

In small mixing bowl, combine margarine, milk, orange juice concentrate, egg, honey, and vanilla.

Combine flour, baking soda, and salt. Stir into liquid ingredients. Mix well. Fold in chocolate chips. Spread mixture in prepared baking pan.

Bake at 350 degrees for 20-25 minutes.

Cut into 15 pieces.

Yield: 15 pieces; serving size: 1 piece
Exchanges per serving: 1 starch/bread, 1 fat
Per serving: 102 calories, 12 g carbohydrate; 2 g protein; 6 g fat; 62 mg sodium
