Recipe(tried): Pineapple-Pecan Cake - Easy Wedding Cake (using cake mix)

Ruth, Don't panic, everything will be just fine for your wedding. I do this all the time for my family's big events. I know you don't want to use box cake mix, but let me tell you no one will know it's from a box.

Try the Betty Crocker Yellow Cake-Butter recipe mix. Mix 2 boxes at a time as instructed on the package.

When mixed add 1 cup of undrained crushed pineapple and 1/2 cup coarsely chopped pecans. Bake according to package directions.

You can make these in advance up to a month prior to needed it and freeze (well wrapped in cling wrap then in foil) stack them placing cardboard between each. Thaw the day before and frost.

Go to the nearest Wal-mart Supercenter and see the florist she can make beautiful flower arrangements for your cake at a price you can afford.

I give you my word everyone will want to know where you got the cake. You will certainly want to give yourself the credit and not the local bakery.
