Recipe(tried): Chocolate Covered Cherry Cookies

CHOCOLATE COVERED CHERRY COOKIES

Dough:
1/2 c. soft margarine
1 cup sugar
1 egg
1 1/2 tsp. vanilla
1 1/2 cups flour
1/2 cup unsweetedned cocoa
1/4 tsp. salt
1/4 tsp. baking powder
1/4 tsp. baking soda

Cream together margarine, sugar, egg and vanilla until fluffy. Add remaining ingredients. Blend at low speed until dough forms. (dough will be stiff.) Shape dough into 36-48 1" balls unsing a heaping tsp. of dough placed 2" apart on ungreased sheet pan. Push 1 cherry halfway into each ball. When all cookies are prepared, make frosting to use immediately.

Frosting:
1 cup semi-sweet chocolate chips
1/2 cup condensed milk
1/4 tsp. salt
1 1/2 tsp. cherry juice

Melt the chips in condensed milk stirring constantly, remove from heat. (or use microwave), Add remaining ingredients, stir until smooth. Frost each cookie by speading approx 1/2 tsp. of frosting over cherry (frosting will spread slightly during baking) 350 for 8-10 minutes until fluffy. Remove and cool. Store tighty covered.
