Recipe: Droste Cracked Chocolate Cookies

DROSTE CRACKED CHOCOLATE COOKIES

1 1/4 cups firmly packed light brown sugar
2/3 cup vegetable shortening
1 tablespoon water
1 teaspoon vanilla extract
2 eggs
1 1/2 cup flour
1/3 cup Droste cocoa
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup confectioners' sugar

Preheat oven to 375 degrees F.

In a large bowl with electric mixer at medium speed, beat brown sugar, shortening, water, and vanilla until well blended. Beat in eggs.

In a medium bowl combine flour, cocoa, soda, and salt. Add flour mixture slowly mixing until blended. Shape dough into 1 1/4 inch balls. Roll in confectioners' sugar. Place on ungreased cookie sheets 2 inches apart.

Bake for 7 to 9 minutes or until cookies are set. Cool for 2 minutes then remove from cookie sheets and cool on a rack.

Makes about 4 dozen cookies
