Recipe: Chocolate Pie, Fudge Cream Pie and Chocolate Pie or Pudding

CHOCOLATE PIE

2 egg yolks
2 cups water
2 cups (1 can) Milnot (evaporated milk)
1 cup sugar
4 tbsp. flour or cornstarch
3 tbsp. unsweetened cocoa powder
1/2 stick (1/4 cup) butter
1 baked pie shell
Cool Whip (for topping)

Put pan on stove and heat yolks, 2 cups water, and milnot (do not boil). Add sugar, flour or cornstarch and cocoa powder; stir until mixture thickens or boils.

Add butter and stir until melted. Pour in pie shell. Cool and refrigerate.

Top with Cool Whip.

FUDGE CREAM PIE

1 1/3 cups sugar
1/4 cup flour
1/4 cups unsweetened cocoa powder
1 cup Milnot (evaporated milk)
3 egg yolks, slightly beaten
2 tbsp. butter
1 1/2 tsp. vanilla
1/2 cup chopped nuts (optional)
1 (8 or 9-inch) baked pie shell
Meringue (optional, recipe follows)

Mix sugar, flour, cocoa powder, and milnot together. Stir over medium heat until boils and is thickened. Reduce heat, cook and stir 4 minutes.

Add small amount of hot mixture to egg yolks. Then return to big batch. Cook and stir 3 minutes or until very thick.

Remove from heat. Stir in butter and vanilla. Cool about 5 minutes. Put in 8 or 9-inch pie shell, already baked. Refrigerate or cover with meringue, if desired.

AMISH MERINGUE

1 tbsp. cornstarch
2 tbsp. sugar
1/3 cup sugar
3 egg whites
Pinch of salt
1/2 tsp. vanilla
2 tablespoons melted semi-sweet pieces (optional, for garnish)

Cook cornstarch, sugar, and water and stir until thick and clear. Set aside and cool.

Beat egg whites, salt, and vanilla until frothy. Add 1/3 cup sugar, a small amount at a time, beating well after each addition. Beat until fairly stiff. Add other mixture. Beat quite awhile. Put on pie filling.

Bake at 350 degrees F about 15 minutes or until nicely browned.

May drizzle 2 tablespoons melted semi-sweet pieces over top, if desired.

CHOCOLATE PIE OR PUDDING (no butter)

2 cups milk
3 tbsp. unsweetened cocoa powder
1 cup sugar
3 tbsp. cornstarch
1/4 tsp. salt
1/2 cup Milnot (evaporated milk)
2 egg yolks
1 tsp. vanilla
1 baked pie shell (optional)

Pour the milk into a saucepan and heat to scalding not boiling.

Mix together cocoa powder, sugar, cornstarch and salt. Add Milnot milk to dry mixture and mix well. Beat in the egg yolks.

Pour the cocoa mixture into the hot milk. Cook over medium heat until thickened. Remove from heat and add the vanilla.

If you want pudding, pour into small cups. If you want a pie, pour into baked pie shell.

MERINGUE FOR PIE

3 egg whites
1/4 tsp. cream of tartar
6 tbsp. sugar

Beat all together until stiff. Put on pie filling and bake at 350 degrees F until golden brown.
