Recipe(tried): Chow Mein Chicken Casserole for Rita

CHOW MEIN CHICKEN CASSEROLE

1 Tbsp. butter or margarine
1 small red bell pepper, chopped
2 garlic cloves, minced
2 (8oz.) packages sliced fresh mushrooms
1/3 cup slivered almonds
3 green onions, chopped
1 (10-3/4oz.) can cream of mushroom soup, undiluted
3/4 cup mayonnaise
2 tsp. soy sauce
3 cups chopped cooked chicken
1/4 tsp. pepper
1 (3 oz.)can chow mein noodles, divided

Melt butter in a large skillet. Add red bell pepper, garlic, and mushrooms; saute until tender. Stir in almonds and next 6 ingredients and 1/2 can noodles. Mix well. Pour into a lightly greased 11"x7" baking dish. Sprinkle with remaining chow mein noodles. Bake at 350 deg. for 30 min. or until bubbly. Yield: 6 servings.
