Recipe: Church Supper Sloppy Joes (50 servings) (make ahead)

Sandwiches
CHURCH SUPPER SLOPPY JOES

7 lb extra lean ground beef
1 1/2 cups chopped onion
1 1/2 cups chopped celery
1/2 cup brown sugar, packed
2 tbsp mustard
1 1/2 quarts tomato puree or sauce
1/2 cup vinegar
3 tsp minced garlic
1 dash salt
1 dash ground black pepper
1 1/2 cups shredded sharp cheddar cheese
hamburger buns (to serve)

In a large skillet, brown beef, onion and celery. Cook in batches if necessary. Drain any fat.

Add all remaining ingredients except cheese and buns; cook 10 minutes.

Stir in cheese; cook until melted. Serve on buns.

TO MAKE AHEAD:
Recipe can be made ahead of time and frozen in batches when serving a crowd.

Makes 50 servings
