COCONUT ISLAND COOKIES
Chocolate Frosting:
1 1/2 (1 1/2 oz.) sq.unsweetened chocolate
1/4 cup sour cream
1 Tbsp. butter
1 1/2 to 2 cups confectioners sugar
Heat unsweetened chocolate squares, sour cream and butter in top of double boiler, stirring until chocolate melts. Immediately remove from heat.
Gradually blend in confectioners sugar until of spreading consistency.
Cookies:
2 cups flour
1/2 tsp. soda
3 squares (3 oz.) unsweetened chocolate
1/4 cup hot strong coffee
1/2 tsp. salt
1/2 cup butter
1 cup packed brown sugar
1 unbeaten egg
1/2 cup sour cream
1/3 cup coconut, finely cut
Sift together flour, soda and salt.
Melt unsweetened chocolate squares in 1/4 cup hot strong coffee in small saucepan over low heat; cool.
Cream butter. Gradually add brown sugar and cream well. Blend in unbeaten egg and chocolate mixture. Beat well. Add dry ingredients alternately with sour cream to creamed mixture, beginning and ending with dry ingredients. Blend thoroughly, stir in 1/3 cup finely cut coconut. Drop by teaspoonfuls, onto greased cookie sheet.
Bake at 375 degrees for 12 to 15 minutes. Frost while warm and topwith coconut.
