Recipe(tried): Coffee Shop Blueberry Muffins

Breads - Muffins, Quick Breads
HI! This is the recipe I use all the time in the coffee shop I manage. I use the Texas size muffin tins ,so this recipe will make 6 large muffins or 12 regular size muffins.

Blueberry Muffins
2 cups all-purpose flour
3/4 cup sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
3/4 cup milk
2 large eggs
1/2 cup butter or margarine, melted
1 cup blueberries
2 tsp. grated lemon zest ( optional)

Combine the first 4 ingredients ( the dry ), mixing well.
In another bowl, combine the next 3 ingredients ( wet )mixing well.
Add the wet ingredients to the dry, mixing just till combined. Add the blueberries and the zest, mixing to combine ( but not too much).
Grease muffin tins. Portion out the batter.
Bake in a 350 F. preheated oven for 25-30 minutes or till tops are
golden brown.
