BEET CITRUS SALSA
1 (15 1/2 ounce) bottle Aunt Nellie's Ruby Red Sweet and Sour Harvard Beets with orange and lime (or regular Harvard beets), rinsed, drained and chopped
1 medium orange, peeled, seeded and diced
2 tablespoons chopped green onion
2 tablespoons minced fresh cilantro
1 tablespoon fresh lime juice
2 teaspoons minced fresh ginger
1/4 teaspoon salt
Crackers, flatbread or chips (for serving)
Stir beets, orange, green onion, cilantro, lime juice, ginger and salt together to combine. Cover and refrigerate about 30 minutes to let flavors blend.
Serve with crackers, flatbread or chips.
Makes about 2 cups, 4 servings
