I just ran across these recipes for Spaghetti Squash in my files from an old EAT-L digest and thought you might enjoy them.

SPAGHETTI SQUASH KUGEL

4 eggs
1 1/3 cup lowfat cottage cheese
1/4 teaspoon ground cinnamon
Sweetener equivalent to 3 teaspoons sugar
1 teaspoon vanilla butternut flavoring
3 cups cooked, drained Spaghetti Squash

Preheat oven 350. In large bowl beat eggs. Add cottage cheese,
cinnamon, sweetener and vanilla butternut. Beat until well blended. Add
Spaghetti Squash to egg mixture, mix well. Pour into a casserole sprayed with your favorite veg spray(Pam etc). Sprinkle with additional cinnamon. Bake 30 minutes or until set and lightly browned. Serves 4, 164 cals, 7 grams fat

MEAT SAUCE AND SPAGHETTI SQUASH

1/2 pound lean ground beef
salt and pepper to taste
1 tablespoon minced onion flakes
Dash garlic powder
one 8 oz can tomatoe sauce
1 teaspoon dried oregano
1/2 teaspoon dried basil
2 cups cooked, drained Spaghetti Squash
1 tablespoon plus 1 teaspoon grated parmesan cheese

Place beef on broiler rack in shallow pan. Sprinkle with salt and pepper
to taste. Brown meat under broiler. In lg saucepan, combine beef, onion,
garlic, tomato sauce, oregano, and basil. Cook covered over med heat
for 10 minutes, stirring occasionally. Preheat oven 375. Add Spaghetti Squash to beef mixture, toss to blend well. Pour into 2 quart sprayed (Pam etc) casserole. Sprinkle with parmesan cheese. Bake, uncovered 20
minutes. Serves 2, 332 cals, 19 grams fat

ITALIAN BAKED SPAGHETTI SQUASH

2 cups cooked, drained Spaghetti Squash
one 8 oz can tomato sauce
1/2 teaspoon dried oregano
1/8 teaspoon garlic powder
1tablespoon plus 1 teaspoon grated parmesan cheese

Preheat oven 375. Place Spaghetti Squash in a one qt. casserole sprayed with Pam. Combine tomato sauce and spices; pour evenly over Spaghetti Squash. Sprinkle with cheese.and bake 20 minutes or until hot and bubbly.
Serves 4, 47 cals, 1 gram fat

ITALIAN SPAGHETTI SQUASH FRITTERS

2 eggs
1/2 cup part skim ricotta cheese
1 oz grated parmesan cheese
3 tablespoons flour
1/2 teaspoon baking powder
2 teaspoons veg. oil
1/8 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1 tablespoon minced onion flakes
2 cups cooked Spaghetti Squash

In blender container, combine all ingred, except Spaghetti Squash Blend until smooth. Stir in Spaghetti Squash Pour mixture onto a preheated nonstick skillet or griddle sprayed with Pam. Cook over med heat until brown on both sides, turning carefully.
SAUCE: Combine one 8oz can tomato sauce, 1/4 teaspoon dried
oregano, 1/8 teaspoon garlic powder, 1/4 teaspoon dried basil in a small
sauce pan. Heat until hot and bubbly. Serve over fritters.
serves 4, 117 cals, 10 grams fat

SPAGHETTI SQUASH ALFREDO

1 tablespoon plus 1 teaspoon reduced calorie marg.
1 cup part skim ricotta cheese
2 oz grated parmesan cheese
1/8 teaspoon garlic powder
1 tablespoon dried parsley flakes
salt and pepper to taste
2 cups cooked Spaghetti Squash

Melt marg in med nonstick skillet over med low heat. Add remaining
ingred except Spaghetti Squash Heat through, stirring to blend well. Add Spaghetti Squash Cont to heat, stirring gently, until Spaghetti Squash is hot. Serves 2, 379 cal, 23 grams fat

SPAGHETTI SQUASH VERDE

one 10 oz package frozen chopped spinach, thawed and drained
2 cups cooked Spaghetti Squash
1/4 teaspoon garlic powder
1/8 teaspoon pepper
2 oz grated parmesan cheese
1 tablespoon plus 1 teaspoon marg, melted

Preheat oven 350. Combine all in large bowl. Toss until well blended.
Place in 1 qt baking dish sprayed with Pam. Bake covered 25 minutes
until hot. Serves 4, 139 cals, 8 grams fat.
