Here is a great PA Dutch receipe for Chicken Bot Boi
I make this with Turkey parts too.
Cook fowl in cold salted water until it begins to fall off the bones.
Sive off broth and cool meat to remove from bones.
Chop one onion, 4 or 5 celery stalks (ribs) not the whole thing,
five or six carrots, one clove garlic, 3 or 4 potatoes.
Home made noodles: 3 cups of flour, 1 tsp salt, 1 egg beaten with milk to
make 1 cup. about 1 tbsp shortening. Mix with fork (this dough will be stiff)
form into ball and place on lightly floured board, cover with bowl to rest
at least 20 minutes. Roll out and cut into 1 inch squares.
Bring broth and chicken pieces to boil. Drop in noodles and vegetables
alternating so noodles don't stick together. Add salt and pepper to taste.
