Recipe: Don's Mock Sausage (low salt, using ground turkey and pork)

DON'S MOCK SAUSAGE

"Not everyone eats pork, but those who do love a good pork sausage. Unfortunately for us, most commercial sausage is loaded with salt, nitrates, and other high-sodium ingredients. It also has a lot of saturated fat. We can change all that in our kitchens with some clever mixing of spices and very lean ground pork, turkey, or chicken. I personally like the very lean ground turkey for cutting down on the fats and because it's always available in our area. I hope the same is true for you. You can make these and serve them in two-ounce size patties. They'll taste just like the real thing."

6 ounces lean ground turkey (142 mg)
2 ounces lean ground pork (47.6 mg)
1/4 teaspoon ground pepper (.231 mg)
Pinch of ground cloves (.612 mg)
1/2 teaspoon ground sage (trace)
1/2 teaspoon minced fresh or powdered garlic (.369 mg)
1/8 teaspoon onion powder (.141 mg)
Large pinch of mace (.136 mg)
1/8 teaspoon allspice (.183 mg)
1 teaspoon extra-virgin olive oil (trace)

In a medium bowl, mix together all ingredients except for the oil.

Shape into 4 evenly sized patties and cook in a nonstick pan with the olive oil over medium heat. Cook each side for 5 to 8 minutes, or until browned.

Serve hot with eggs. or as dinner with freshly steamed broccoli, asparagus. or squash, and sliced tomatoes.
