Re: Comfort food - Vegetable Beef Soup

My personal favorite is a chunky vegetable beef soup. I make it with a pound of sirloin with lots of carrots, potatoes, onions, garlic, corn, peas, and green beens. I also add a 28 oz can of Italian seasoned crushed tomatoes, 1 can of beef broth, and about 4 cups of water, and I simmer it for several hours. I season it liberally with whatever I have on hand. It is thick, pretty lean, yet very hearty and satisfying...mmmm...now I'm really hungry!
