COOL FRUIT TART
2 cups Bisquick baking mix
2/3 cup sugar, divided use
1/3 cup margarine or butter, softened
1 egg
1 (3 oz.) pkg. cream cheese, softened
34 cup sugar
1 tsp. vanilla
3/4 cup chilled heavy (whipping) cream
Assorted fruit (mandarin orange segments. kiwifruit slices, strawberry halves, peach slices)
1/2 cup apple jelly, melted
Heat oven to 375 degrees F.
Mix baking mix and 1/3 cup sugar; cut in margarine until crumbly. Mix in egg until a soft dough forms. Pat dough in 12-inch pizza pan or tart pan.
Bake until edges just begin to brown, 10 to 12 minutes; cool in pan on wire rack.
Beat cream cheese, remaining 1/3 cup sugar and the vanilla in small bowl on low speed until smooth. Beat in whipping cream on medium speed until stiff peaks form.
Spread cream cheese mixture over crust to within 1/4-inch of rim. Arrange fruit decoratively on top; brush with jelly. Refrigerate at least 2 hours.
High Altitude Directions (3500 to 6500 ft.): Heat oven to 400 degrees F.
Makes 8 to 10 servings
