Corn Sticks with Bacon

2 1/4 cups yellow cornmeal
3/4 cup all purpose flour
1 1/2 tablespoons baking powder
1 teaspoon salt
2 1/4 cups milk
1/2 cup pure maple syrup
4 eggs, room temperature
1 egg yolk
12 bacon slices, cooked until crisp, crumbled
3/4 cup chopped pecans (about 21/4 oz.)
Vegetable oil
Preheat oven to 350F. Place corn stick pans in oven and heat while preparing batter.
Sift cornmeal, flour, baking powder and salt into large bowl.
Mix milk, syrup, eggs, and yolk in medium bowl. Mix into dry ingredients. Fold in bacon and nuts.
Brush pans with oil. Spoon batter into molds, filling almost to top.
Bake until golden brown, about 25 minutes. Remove from pans.
