Recipe(tried): Corned Beef Hash

CORNED BEEF HASH

3tbsps Margarine
2 large onions, finely chopped
1lb potatoes, peeled, cooked & cut into 1/2" cubes
1/2lb corned beef, cut into small dice
1/2tsp black pepper
1/3cup single cream
4 eggs

Melt 1/2 the margarine in a medium frying pan, add onions & cook gently till softened & golden-about 15mins. Mix them with the potatoes in a medium bowl,
then stir in corned beef & pepper. Wipe out the pan, melt remaining margarine & add potato mixture, pressing it down flat. Cook over medium heat 5mins, trickle the cream on top & cook 5mins more or till golden underneath. Turn the underneath portion to the top(it will break into little pieces) & when most is
turned, flatten again & continue cooking till underneath is brown-about 10mins. While hash is cooking poach eggs so they will be ready at
same time.
Slide hash onto warm plates & top with an egg.
